If you have leftover potatoes and carrots or any other root vegetable from yesterday\u2019s dinner, you\u2019re ready to go.<\/p>\n<p>You\u2019ll have a delicious side dish in about 30 minutes.<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>Leftover cooked potatoes<\/li>\n<li>Leftover cooked carrots or other root vegetable<\/li>\n<li>3 tablespoons olive or coconut oil<\/li>\n<li>Salt and pepper or other seasoning to taste<\/li>\n<li>Optional: Red Wine Vinegar<\/li>\n<\/ul>\n<h3>Preparation:<\/h3>\n<ol>\n<li>Slice the potatoes and carrots rather thinly, but not so thin that your veggies fall apart.<\/li>\n<li>Heat the oil over medium high heat. Add the potatoes and carrots and sautee, stirring occasionally until desired crispiness. For a crisp on the outside result, sautee for about 20-30 minutes.<\/li>\n<li>After they\u2019re cooked, place them on a paper towel to remove any excess oil. Sprinkle seasoning salt, pepper or any of your favorite seasonings.<\/li>\n<li>For an extra (yummy) kick, use\u00a0<a href=\"\/cuckoo-coconut-oil\/\">super-healthy, unrefined coconut oil<\/a>\u00a0and when nearly done, sprinkle with red wine vinegar!<\/li>\n<\/ol>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>You\u2019ve probably had sauteed leftover potatoes before, but did you know carrots and other root vegetables can be a great addition?
